Quick and Easy Recipes for November: Easy Brownie Truffles

For this week I am going to share with you one of my favorite quick and easy recipes, drum roll please….Easy Brownie Truffles!

I know you are going to love these chocolate goodies. This is the perfect recipe if you want to “fake it, til you make it”, and  your friends and family will be blown away. But little do they know these little balls of deliciousness are semi-homemade.

Here is my recipe for easy brownie truffles!

Here is what you will need to make these amazing truffles.

 

1 Box of brownie mix of your choice

1 Bag of chocolate melts

Directions:

  1. Follow the instructions on the back of the brownie mix
    • Note: use milk in place of water and add a splash of Vanilla extract
  2. Let the brownies cool completely
  3. Once cooled cut the edges of the brownies off (feel free to eat and enjoy)
  4. Use your hands or a fork to crumble the large square of brownie
  5. Take about half a handful or a tablespoon of the brownie crumble into the palm of your hand and roll it into a ball, and then place it on a piece of parchment paper.
  6. Once you have all of the balls rolled out place them in the freezer to chill for about 30 minutes.
  7. Once chilled remove from freezer
  8. Melt your chocolate melts based on the instructions of the package
  9. Dip the balls into the chocolate until evenly coated all around
  10. Place on parchment paper or a cooling rack for the chocolate to dry.
  11. Chill in your refrigerator for about an hour and enjoy!

If you would like to decorate them, you can choose any toppings of your choice. But make sure to add your toppings will the chocolate is still melted and not hard. Some of my favorite toppings to use are finely chopped walnuts, sprinkles, white chocolate drizzled on top, or caramel drizzled on top.

Quick and Easy Recipes for November: Chocolate Croissants

If you haven’t already checked out last week’s recipe for Quick and Easy Pumpkin Spice Cupcakes, then you don’t know what you’re missing.

For this week I am going to share with you one of the easiest and most versatile recipes ever. This is the perfect recipe if you are in a pinch and short on time. Not to mention they taste great! This recipe only consists of 2 ingredients and maybe 5 minutes to prep and 12 minutes to bake.

Here is my recipe for quick and easy chocolate croissants!

Here is what you will need for these delicious Chocolate Croissants:

1-2 Cans of Pillsbury Crescents

1 Bag of Chocolate Chips of your choice (I prefer the Ghirardelli Milk Chocolate Chips)

Directions:

  1. Preheat oven to 375 degrees
  2. Unroll the dough and separate each triangle
  3. Add a teaspoon or more of Chocolate Chips to the larger end of the triangle
  4. Roll the dough gently
  5. Bake for 10-12 minutes or until golden brown
  6. Let them cool completely and sprinkle with powdered sugar for that extra homemade touch

If you are feeling a little more adventurous try using apple pie filling instead of chocolate chips with a little dash of caramel syrup to make Caramel Apple Pie Croissants. Then top with a little powder sugar and drizzle with caramel. These are so delicious.

Quick and Easy Recipes for November

Fall is officially here…Well, kind of for us San Diegans. It is November and my favorite time of year because everything Pumpkin is acceptable. Also, this time of year there are a ton of social events centered around food like work potlucks, Friendsgiving, etc. And if you are anything like me you leave everything to the last minute and find yourself running to your local grocery store to pick up something store bought.

But this year I refuse to be that person at the party who brings the store bought dish still in the grocery bag.

For the month of November, I am going to share with you quick and easy recipes that will have you feeling like you have made a homemade dish that will be the star of the party.

NEW RECIPES EVERY THURSDAY IN NOVEMBER!!!

This week I am sharing my Semi-Homemade Pumpkin Spice Cupcakes that will have everyone running back for more.

Here is what you will need for the Cupcakes:

Cupcake Baking Cups

1 Box of Yellow Cake mix

1 Can of Libby’s 100% Pure Pumpkin

½ Cup of Milk

⅓ Cup of Vegetable Oil

4 Eggs

1 ½ Teaspoons of Pumpkin Pie Spice

1 Splash of Vanilla Extract

1 Container of Cream Cheese Frosting (if you don’t have time to make your own frosting)

Directions:

  1. Preheat oven to 350 degrees or 325 degrees for dark or nonstick pan, place Cupcake Baking Cups in a regular size cupcake/muffin baking pan.
  2. In a large mixing bowl mix yellow cake mix, milk, pumpkin, oil, eggs, splash of vanilla extract and pumpkin pie spice. It is best to use an electric mixer on low speed for about 30 seconds, then on medium to high speed for about 2 minutes. Or you can mix by hand until mixture is smooth.
  3. Fill cupcake baking cups about ⅔ full of the mixture
  4. Bake for 19-24 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
  5. Let cupcake cool for about 30 minutes
  6. Frost cupcakes with canned frosting or homemade frosting (recipe below) and decorate to your liking.

If you are really feeling fancy, here is what you will need to make your own Whipped Cream-Cream Cheese Frosting *This is the way to go*

1 Package of Cream Cheese (8oz)

1 Cup of White Sugar

1 Pinch of Salt

1 Teaspoon of Vanilla Extract

1 ½ Cups of Heavy Whipping Cream

Directions:

  1. In a medium mixing bowl beat heavy whipping cream until soft peaks form and set aside.
  2. In a medium to large mixing bowl mix cream cheese, salt, vanilla, and sugar until smooth, once smooth fold into heavy whipping cream.

Savvy DIY: Knock-off Wildfox Sweatshirt

Savvy DIY-Knock Off Wildfox

Hello everyone!

So have you all seen those super fabulous WildFox sweatshirts with the  glittery heart?  You know the ones that cost about $150.00 (CRAZY, right?).

Ever since I saw the Wildfox sweatshirt on this chick that I ran in to at UTC mall back in October I wanted one, but I am not the one to  pay $150.00 for an oversized cotton sweatshirt with glitter on it. I tried to find a cheaper version of the sweatshirt, but I had no luck. So I figured I am a very savvy and creative person, so how can I go about making one for myself? Well first and foremost I figured all I needed was an oversized cotton sweatshirt, some glitter and something to hold the glitter in place. So I set out on a mission to make it happen. First I went to Joanne’s Fabric, and of course picked the brains of the helpful employees in the store and they helped me come up with the process of how I was going to make this happen.

Apparently all I needed to make my own sweatshirt was only four items:

  1. Cotton Sweatshirt of my choice (I got mine from Walmart for about $5.00)
  2. Glitter in the color of my choice
  3. Large heart stencil
  4. Fabric Glue

And here is the process that I used to make my sweatshirt:

  1. I placed my sweatshirt on a hard flat surface, and made sure it was smooth and had no wrinkles.
  2. I placed my heart stencil on my sweatshirt were I wanted the heart to be, and then I taped it on to the sweatshirt so that it would not move.
  3. In a bowl I mixed my glitter and fabric glue to make a glittery paste.
  4. Apply the glitter paste with a large paint brush or sponge.
  5. Let  it dry for about 20 minutes or if you are inpatient like me use a hairdryer to speed up the process.
  6. If there are any bald spots in your heart after you let it dry for a while, go back in and fill them in with more glittery paste.
  7.  Now let it dry for a few hours
  8. Cut the neck of the sweatshirt so that it has that off the shoulder kind of look.

And there you have it a FABULOUS knock-off Wildfox sweatshirt.

I loved my sweatshirt so much that I had all of the ladies at work make there own, and they came out so fabulous!

P.S. I have also learned that I am not the only one who wanted a cheaper version of this sweatshirt and figured out how to make it. You can also find DIY for this sweatshirt on YouTube.
